Sometimes eating a dish from childhood can remind you of all the fun times with your sibs. Maybe Prince William and Harry should tuck into their favorite mac and cheese, created by the Royal Chef. Here, we remade the dish, which calls for three different kinds of cheese, in a dairy-free (healthier) version. The chef Darren McGrady, shared this recipe in a recent magazine interview and also revealed that as youngsters the princes had an aversion to vegetables.

As young boys, their Nanny would sneak broccoli onto their plate and did what she could to trick them into “eating their greens”, according to the former Royal Chef. Their nanny used to make them eat every piece of broccoli before they were allowed to dive into their entree, “So, the boys had to have the broccoli if they wanted to have the chicken,” McGrady recalls. As a chef, McGrady worked for Queen Elizabeth II, Princess Diana, and the palace for fifteen years.

Vegan mac and cheese fit for a prince, or two

McGrady has his own YouTube channel, where he teaches you how to make the meals and dishes that Price William and Harry enjoyed as children. The royal princes always had a big appetite, McGrady says, so he cooked their favorite comfort foods like cottage pie, roast chicken, and hearty side dishes. William and Harry enjoyed potatoes with gravy and loved his creamy and comforting mac and cheese.

Luckily, the royal chef now reveals how to make that mac and cheese dish the royal boys loved growing up, but since it’s not vegan we decided to add a plant-based twist.

The Beet created a vegan version of the mac and cheese that all plant-based mac and cheese lovers can enjoy, and feel like royalty. The secret to making the favorite gooey side dish is using three different types of cheeses. McGrady adds mozzarella, parmesan, and cheddar then creates a creamy thick roux using flour and butter. We made the same recipe using our favorite plant-based ingredients. McGrady explains how to make his recipe healthier than the store-bought kind, adding, “Don’t tell me, you still use the packing mixes at home. Look at the ingredients on the side! They have too many additives and preservatives.”

Royal Mac and Cheese Made Vegan

Now for how to make the royal plant-based mac and cheese. First, boil the pasta and keep it slightly al dente, so that it doesn’t get too mushy by the time you add the cheese topping. Use medium-sized elbow macaroni (William and Harry’s favorite). Once the pasta is mostly cooked, drain and set it aside while you prepare your cheese sauce. On medium heat in a saucepan, combine the following ingredients:

  • 1 cup of all-purpose flour (use rice flour to make it gluten-free)
  • 1 cup of cashew milk (if you prefer you can use oat milk or almond milk)
  • 1/2 cup of coconut cream (this is essential for thickness

Mix as you heat, until the sauce starts to thicken and then add three types of plant-based cheese, cheddar, parmesan, and mozzarella in equal measurements, about a half-cup each.

Chef says, “let the sauce cook out for about 10-15 minutes so it opens the starch granules and then I’ve got my elbow macaroni that I just cooked a little earlier but I just put into the sauce.” And, voila you have yourself a delicious plant-based version of William and Harry’s favorite mac and cheese, and we’re making traditions healthier!

To get a nice crispy grown on top texture, add another coating of the vegan parmesan cheese and throw the whole thing into the over for five minutes on 425. Let it cool and serve.

Instructions

  1. In a large pot, on medium heat, add in the flour, cashew milk, and coconut cream. Mix until thick.
  2. Then, add the three kinds of cheese, and stir.

More and more celebrities are publicizing their curiosity about plant-based diets thanks to the fast-paced growth of the movement. Some celebrities even go as far as openly encouraging other stars to make that switch, like Paweł Tomasz Wasilewski, known professionally as Paul Wesley, a lead actor in the popular series The Vampire Diaries.

Recently, Wesley tried to entice rapper Cardi B to take the next step toward a meat-free diet after she asked her fans how to ditch animal-based protein, tweeting, “I want to go vegan but I love meat.. are vegan meat replacements similar to meat in taste or not really?”

Two days later, Wesley replied, “Hello Cardi B- going vegan is the best decision I ever made,” a tweet that garnered more than 7,000 likes. The actor’s comment about his personal journey lured us to dig deeper into his plant-based lifestyle as we wait for Cardi to make the move.

A Look Into Paul Wesley’s Vegan Journey

Wesley went vegan over a decade ago, citing his compassion towards animals, and ever since, he has been a powerful advocate for the cruelty-free diet. The actor’s vegan journey was publicized in 2012 when Wesley co-hosted the Humane Society of the United States’ H-Couture 2012 event, a fashion show that features vegan designers.

Two years later, Wesley wrote a letter to the CEO of pork company Seaboard Foods in an attempt to dissuade its use of gestation crates, which he considered to be “cruel methods of the past,” according to PETA. Every so often Wesley he attends different animal-rights events hosted by Mercy For Animals and other organizations to help spread the word about veganism and better the treatment of animals.

In September 2019, Paul Wesley and his wife Ines De Ramon attended The Game Changers New York premiere at Regal Battery Park 11 in New York City – supporting vegan athletes who help spread the message we can build muscle and boosts athletic performance by eating a vegan diet.

Last year, Wesley responded to Kamala Harris’ Thanksgiving recipe post on Instagram of cornbread dressing that called for pork as one of the main ingredients. “How about we use veggie sausage instead of pork and help fight climate change?” Wesley asked. It wasn’t long before JIVINITI Women’s Coalition petitioned Harris to eat vegan for the month of January, and evidence showed she leaned into the request after she was seen ordering vegan tacos in Las Vegas last March.

Also in 2020, Wesley drew attention towards factory farming and encouraged his 4.2 million Twitter followers to go vegan in 2021: “Factory farming is, in my opinion, one of the most important issues of our time. If not the most important. The unimaginable suffering imposed on living beings, the cause of numerous diseases/ pandemics, and the greatest contributor to climate change. Join me & go vegan in 2021,” he tweeted.

On Earth Day of this year, April 22nd, Wesley educated his 11.9 million Instagram followers about the link between diet and planet, saying, “A plant-based diet is hands down THE single biggest way to reduce your impact on this earth. “I encourage you all to try to reduce your dependence on animal products. Not only will we be saving the planet, but we’ll also be saving many animals from the unnecessary suffering that is a sad reality of today’s industrialized food system.”

What Paul Wesley Eats in a Day on His Vegan Diet

Billie Eilish is consistently changing what it means to be an icon: From her music career to a breakthrough fashion statement, the 19-year-old Grammy Award winner defies the mainstream. For inspiring the world to eat more plant-based and inspiring the fashion industry to abandon fur, PETA just announced that Eilish will be awarded the 2021 Person of the Year Award. Beyond her career, Eilish is an extremely vocal activist working to promote veganism, stop animal cruelty, and replace harmful food systems with more sustainable and environmentally friendly ones.

“Billie Eilish is making sure that the party’s over for meaty, milky meals as well as for leather, fur, and silk,” PETA President Ingrid Newkirk said in an official statement. “PETA is happier than ever to celebrate her for seizing every opportunity to point out that vegan fashion and foods are kinder to the animals and the planet we share with them.”

Eilish will become the youngest person to be granted the highly regarded PETA honor. Previous winners include Joaquin Phoenix, Pope Francis, Oprah Winfrey, Tabitha Brown, and more. Eilish received the award following her year of success, working with the MET Gala to provide its first plant-based dinner, pushing innovative animal-free fashion products, and much more.

The superstar aims to inspire her fans and people worldwide to consider the environmental, health, and ethical issues that encouraged her to go vegan. Eilish is a vocal activist who promotes veganism to assist the world against the worsening climate crisis and to boost personal health for communities everywhere. She even wore designer Oscar de la Renta to this year’s Met Gala on one stipulation: That the luxury fashion house ceased all fur production.

“I find it shocking that wearing fur isn’t completely outlawed at this point in 2021,” Eilish said. “I am so beyond thrilled that … the Oscar de la Renta team heard me on this issue and have made a change that not only makes an impact for the greater good for animals but also for our planet and environment, too.”

The Met Gala

Eilish served as a co-chair for this year’s MET Gala and brought her own plant-based twist to the event. The star helped organize the first completely plant-based menu for the event, hiring an impressive list of young chefs led by Marcus Samuelsson to curate an exciting vegan meal. Eilish and her co-chairs aimed to present a menu that reflected not only the New York food scene but also the changing dietary habits worldwide.

Beyond the menu, Eilish appeared at the event in an Oscar de la Renta dress after convincing the fashion house to ban fur from its products. Eilish’s ultimatum was met and the fashion giant dropped fur completely. As the fashion industry rapidly leaves fur behind, the move signified a turning point for the entire fashion industry.

“With all eyes on Billie Eilish at her first Met Gala, she turned the spotlight onto the plight of animals killed for food and fashion,” Newkirk said. “PETA is happier than ever to celebrate her for pushing the fashion industry toward its sustainable vegan future.”

Support + Feed

Alongside her mother Maggie Baird, Eilish helps tackle food insecurity through plant-based eating through Support + Feed – Baird’s charitable organization dedicated to fixing food insecurity onset by the COVID-19 pandemic. The mother-daughter duo works to provide vegan meals to those facing food insecurity or nutritional deficits.

Earlier this year, the non-profit organization teamed up with Joaquin Phoenix and Rooney Mara to provide meals to My Friend’s Place. The meal helped feed LGBTQ+ youth experiencing homelessness. The collective organization reaches communities in New York City, Philadelphia, Washington D.C., and Los Angeles with plans to continue its expansion.

“It’s incredible to believe that what we started as a COVID crisis response to help people experiencing food insecurity by purchasing meals from small plant-based restaurants, has grown to be a real movement,” Baird said.

They’re Trying to Kill US

Eilish’s work fighting food insecurity extends beyond her mother’s non-profit organization. The celebrity, alongside NBA Star Chris Paul, joined the documentary They’re Trying to Kill Us earlier this year. The documentary – directed by Cowspiracy creators Keegan Kuhn and John Lewis – highlights how Black communities across the United States suffered more from the pandemic. The film explores the unjust connections between racism, disease, poverty, nutrition, food deserts, the food industry, and diet.

“I want people to see this film,” Eilish said. “It is so important to help all of us understand the depth of the issue, and that we must all take action to change the food system.”

Eilish helped narrate and promote the film to broadcast the institutional problems that stem from diet and food accessibility. The documentary underlines how nutritional accessibility is responsible for higher levels of deadly diseases and nutritional deficits in discriminated communities.

Vegan Products: Nike, Chocolate, and Perfume

Eilish’s plant-based activism is accompanied by her own ventures: Attempting to sway the market from the inside, debuting several plant-based products over the last year. From fashion to confections, Eilish is developing plant-based alternatives to disrupt the market standards.

Eilish recently released vegan variations of Nike’s signature Air Jordan, featuring her signature slime green color. The vegan collection uses solely vegan ingredients, including an animal-free leather product. The star also debuted her first vegan fragrance called Eilish. The vegan fragrance enters a rapidly growing cruelty-free cosmetics industry.

Stranger Things star Noah Schnapp noticed something off-putting about the highly popular hazelnut snack spread Nutella: The top ingredient is sugar, followed closely behind by palm oil. Seeking to provide a healthier and more sustainable option, Schnapp just announced that he will release a vegan version of Nutella under his brand TBH. Alongside the unhealthy level of sugar and unsustainable palm oil, classic Nutella uses skim milk in its products. TBH’s brand new vegan hazelnut spread will offer a sustainable, delicious option, directed primarily towards Gen Z consumers.

Schnapp’s partnered with brand developers Umana Venture Studio to create TBH. The company aims to disrupt the typical market standards, undercutting Nutella’s unhealthy and environmentally damaging production. TBH’s hazelnut spread will contain 6g of protein, 14g of net carbs, and 50 percent less sugar than its leading competitor.

“TBH is inspired by honesty. It’s about being transparent with ourselves about what we’re actually consuming, and then making a change for the better,” Schnapp said in a statement. “Hazelnut spread on toast has always been my favorite comfort food, but of course, when I was a kid, I didn’t realize that my snack habit wasn’t very good for me or the environment. Once I found that out, I wanted to create a new take on hazelnut cocoa spread with honesty and sustainability at its heart, and found the perfect team to help that vision come to life.”

The 17-year-old actor’s brand has been developing the vegan hazelnut spread for nearly a year to create a product that replicates the acclaimed original. The hazelnut spread will launch on TBH’s website on November 1. The company will also feature its products at retail concept Showfields in New York City and Miami.

Schnapp wants to emphasize the environmental motivations for TBH’s launch through both the product recipe and its distribution. The company announced that it will use completely sustainable packaging, sourced from recycled materials. TBH also promises to plant 20 times more trees than the number of trees that it takes to create its box.

“I feel lucky to be in a position where I can help my generation make a difference through simple pantry swaps like TBH,” Schnapp said.

Schnapp’s decision to launch TBH is directly inspired by the rising concerns regarding the climate crisis across Gen-Z consumers. A recent Pew Research survey found that 76 percent of Gen-Z participants believe that addressing climate change is a top priority. The interest in sustainability has shifted consumer behavior towards

One report from First Insight found that the vast majority of Gen-Z shoppers prefer to purchase sustainable brands. The report explained that 62 percent of Gen-Z consumers prefer to purchase sustainable brands, even if the product costs 10 percent or more than the less sustainable counterparts. The statistics lend themselves to Schnapps decision to launch TBH, aiming the new brand and future products to his generational peers.

“Transparency is definitely a major part of TBH,” Schnapp told Forbes, “And this is super important for Gen Z [consumers] as I’ve noticed they like voting with their dollars. They want products that are better for you and better for the planet.”

Schnapp and Umana Ventures hope that the product’s sustainable angle will propel the TBH brand to the forefront of its market category. Asore consumers demand plant-based and sustainable options, companies similar to TBH plan to seize space in the growing market space. Currently, hazelnut spreads ranks as the second-largest in the nut-based spread category, according to Forbes.

Founder and CEO of Umana Venture Studio Bá Minuzzi believes that between the desired product and Schnapp’s public influence, the company will be able to take on its highly acclaimed competitor.

“There are many great VCs and impact investors, and the more they can back our journey, the better we will be,” Minuzzi said. “We do prefer to work with value-aligned investors. [TBH] is the first brand we’re doing with an influential voice like Noah, and he has been phenomenal to work with.”

Tabitha Brown’s vegan eats will no longer be limited to TikTok demonstration and recipes: The social media influencer just announced that she will be helping to bring Chicago-based restaurant Kale My Name to Los Angeles County. Brown decided to team up with the Midwestern vegan bar and restaurant to bring one of her favorite plant-based eateries to the west coast. Kale My Name’s offshoot location will open its doors on Ventura Boulevard in Encino, California – 20 miles from Los Angeles.

“If you have an idea, a dream, or a thought, honey, do something with it,” Brown said.“This is going to be my first restaurant experience, something I never even thought I could do. [I have] a great partner and a restaurant I love and believe in here in California. I’m not going to stop here. That’s what my spirit is saying: ‘Tab, this is the first but not the last.”

Founded by Nemanja Nekac Golubovic in Spring 2020, the flagship Kale My Name location is nestled in Chicago’s Albany Park. The fully plant-based restaurant features an expansive menu of globally inspired dishes. Brown fell in love with the Albany Park-based restaurant while she lived in Chicago to film the Showtime original, The Chi. She claims to have stumbled upon the local vegan eatery when searching for plant-based establishments on Instagram.

“I don’t live in Chicago. As much as I love Chicago, I needed Kale My Name on a regular basis,” Brown teased in her video announcement. “I thought, ‘What if I talk to the owner and said maybe we should do a Kale My Name LA.’”

Kale My Name provides a vegan dish for everyone, working to create delicious protein alternatives, plant-based twists on classic dishes, and nutritional dishes that would encourage any consumer to try vegan cuisine. Some menu items include potato and vegetable-stuffed empanadas, traditional Balkan bell pepper and eggplant spread called ajvar, and Italian-inspired seitan wraps filled with kale mozzarella sun-dried tomatoes mushrooms, and garlic aioli.

“Kale is a powerful plant, it’s a superfood. As we were designing the menu we kept on replacing ingredients like lettuce and spinach with kale because we were obsessed,” Golubovic told Block Club Chicago.

While Kale My Name LA currently hasn’t announced an opening date, the plant-based restaurant plans to enter the Los Angeles food scene at the Vegandale food festival on October 23. During the festival, the remote Kale My Name pop-up will showcase some of the restaurant’s signature dishes.

Since gaining popularity for her viral video featuring a TTLA sandwich – a sandwich filled with tempeh bacon, tomato, lettuce, and avocado – Brown has established herself as a prominent vegan voice across all social media platforms. Before joining the cast of The Chi, the actress starred on her own the show All Love with Tabitha Brown on the Ellen Network. During the show, Brown shared vegan recipes, nutritional tricks, and motivational guidance, making her one of the most popular plant-based celebrities ever.

Billie Eilish just excited her 94 million fans with a post on IG that revealed her latest creation: A vegan fragrance called Eilish.

Her new product, which will launch in November, is completely animal-free, cruelty-free and of course, like the star herself, vegan. No animal testing during development.

The Grammy-award winner shows herself spritzing the new fragrance with the caption:

i am SO EXCITED to finally share my debut fragrance “Eilish” with you!!!!!!!!!!!!!! AHHHHHHHHHHHHHHHHHHHHHHHHHH!! this is a scent that i’ve been chasing for years and years. this is my favorite smell in the WORLD. fragrance has always been such an enormous part of my life and existence since i can remember, and it was a dream to create this scent and bring my ideas to life. this has been one of the most exciting things i’ve ever done. i can’t wait for it to be yours so soon!!!!!

Eilish drops first fragrance

Eilish’s involvement extended beyond making sure her new perfume is vegan. The 19-year-old superstar worked closely with Paralux, Ltd. to create the fragrance. Eilish advised the company regarding the bottle design, the marketing campaign, and the scent itself. The perfume features a musky, woodsy base with mild spice, vanilla, and deep cocoa. The scent also contains notes of red berries, juicy mandarin, and sugared petals.

Other artists who have launched vegan and cruelty-free beauty are Ariana Grande, with a fragrance called God Is a Woman, and Rihanna with her extensive vegan Fenty line that includes a fragrance, Fenty Eau de Parfume.

“I wanted it to feel like a warm embrace. Like what it feels like to feel your blood rushing through you,” Eilish said about her perfume. “It’s a scent that I’ve been chasing for years and years and years. It’s my favorite smell in the world. My favorite smells are these amber-colored smells, to me, in my brain. I have a really strong nose, and since I was like a little kid, smells are all I think about.”

The fragrance is inspired by the artist’s synesthesia – a phenomenon that causes senses to intertwine. The amber-colored bottle features a body designed by the artist and can be purchased for $68 on BillieEilishFragrances.com starting next month. Currently, consumers can sign up for early access to get the new special-design bottle first.

“Billie Eilish is a singular talent and the voice of a generation. She has a vision in everything she does that is unique, disruptive, and authentically hers,” Paralux President Lori Singer said in a statement. “Partnering with Billie was natural for Parlux because we can bring a vision to life like no one else, and we were equally excited to be on this journey together.”

Eilish continues to use her spotlight to talk about plant-based living and sustainability. The star adopted a plant-based lifestyle at 12-years-old and never stopped advocating for a vegan lifestyle. During this year’s Met Gala, Eilish hosted the event alongside Noami Osaka, National Youth Poet Laureate Amanda Gorman, and actor Timothee Chalamet. The “Ghost Green” color mirrors Nike’s signature Don C Legacy 231 and “Gatorade” design sneakers, picked out by Eilish during a 2019 feature with Complex. The sneakers are rumored to be completely vegan due to Eilish’s consistent plant-based activism as well as Nike’s recent sustainability measures.

Eilish’s upcoming signature shoes were first leaked to the internet when PVA Sneakers released photos of the collaboration on Instagram. The new sneakers will feature Eilish’s name and the singer’s Blohsh stick figure logo. The “Ghost Green” Nike Air Jordan will be completely monochrome, bringing consumers and Eilish fans the vibrant green that the superstar loves.

Nike’s existing Air Jordan designs currently implemented a blend of synthetic and animal-based leather. However, some more modern varieties of the shoe including the Jordan Flight Flex use 100 percent synthetic material, making a completely sustainable and plant-based shoe. Even though Nike has yet to release information about the shoe’s materials, the celebrity’s mother Maggie Baird shared an Instagram story that claimed the upcoming Air Jordans will be vegan.

This month, Eilish discussed climate change and “how to think globally and act locally” alongside marine biologist and CEO of Ocean Collectiv Ayana Elizabeth Johnson during a feature with Nike. The sustainability feature occurs on the heels of the new shoe collaboration release, giving consumers a reason to believe the new Air Jordan will source completely sustainable materials.

The Nike feature tackled a variety of issues across the fashion industry and global climate policy. The two discussed the future of the fashion industry and the importance of activism when it comes to the environment and the climate crisis. Eilish emphasized that “you don’t have to be called an activist to talk about what’s right.”

“Raise your voice, live and vote your environmental values, and change the status quo for climate justice, sustainable fashion, and climate policy,” Johnson wrote.

The Eilish x Nike Air Jordans collaboration is slated to launch on September 30, according to the insider information website zSneakerHeadz.

A recent study from Future Market Insights discovered that the demand for sustainable footwear is rapidly rising. The report explains that consumers have become more conscious about the environmentally healthy practices that big shoe companies have enacted, looking for shoe products that are both cruelty-free and healthy for the planet. Shoe companies such as Nike have innovated their product selection to feature multiple leather substitutes in order to meet changing consumer demands.

“Keeping in mind shifting preference of consumers, most companies are expected to focus on sustainability. Some of them will also include plant-based materials for manufacturing shoes to gain competitive advantage,” a Future Market Insights analyst said.

Earlier this summer, Nike revealed that it would be releasing new variations of its shoes using vegan brand Pinatex’s pineapple-based leather. The “Happy Pineapple” collection revealed new iterations of the companies signature shoes including the Nike Air Max’s, Air Force 1s, and Air Max 90s. The vegan leather-based shoes reflect Nike’s sustainability efforts over recent years, showcasing inventive plant-based materials to replace conventional animal-based leather.

Eilish also just co-chaired the 2021 Met Gala, where she wore a dress from the iconic designer, Oscar de la Renta. The vegan musician required that the brand would have to terminate all its fur sales for her to wear the gown. Legendary chef Marcus Samuelsson will begin traveling across the United States to showcase the culinary history of Black-owned restaurants in a new mini-series entitled “You Have to Taste This”.  In one episode, Samuelsson will interview and visit renowned Atlanta vegan restaurant chain Slutty Vegan. The new docu-series will provide insight to viewers about the future of plant-based cooking in the South and how pioneers such as Slutty Vegan founder Pinky Cole are challenging the traditional dining experience.

The upcoming episodic docu-series will follow Samuelsson’s dining experiences at restaurants in Atlanta, Miami, and Washington D.C., giving viewers the opportunity to learn about Black cuisine in America, ranging from Southern styles to Caribbean cuisines. The award-winning chef’s docuseries will be supported by Pepsi through the company’s ‘Pepsi Dig In’ campaign which is dedicated to supported Black-owned restaurants across the US.

The beginning of the series will take place in the Southern US, spotlighting the vegan entrepreneur and her growing Slutty Vegan empire in Atlanta. Cole’s vegan empire has rapidly become a staple in Atlanta, expecting to begin growing across the entire South. Samuelsson will feature the vegan classics that propelled Cole’s Slutty Vegan to its status, giving the new docuseries

“It is long past time to recognize Black excellence in the culinary world. I’m thrilled to partner with Pepsi Dig In to highlight the cultural history and diverse deliciousness of so many incredible Black-owned restaurants,” Samuelsson said.

The Pepsi Dig In campaign aims to generate $100 million in sales for Black-owned businesses across the United States. The company hopes to help the businesses and restaurants recover from the financial hardships that occurred following the COVID-19 pandemic. The campaign will also provide the business owners with several resources to help jumpstart the businesses that experience negative consequences due to the nationwide shutdown including mentorship, services, and training.

“With this series for Pepsi Dig In, we wanted to bring Black-owned restaurants to the forefront by honing in on the unique stories behind the food they serve,” Vice President and Chief Marketing Officer of PepsiCo Beverages North America (South Division) Chauncey Hamlett said. “Marcus’ expertise and experience made him the perfect host to bring these stories to light, and we’ve only just scratched the surface. We hope that viewers are inspired to visit these restaurants and discover their next favorite dish.”

This is not the first time that Pepsi and Slutty Vegan have crossed paths. Earlier this year, the PepsiCo Foundation and the National Urban League launched The Black Restaurant Accelerator Program with Slutty Vegan as one of its initial recipients. The coalition’s program set out to distribute $10 million to Black-owned businesses across 12 US cities. The money, divided among 500 Black restaurants owners, is intended to help solve the financial disparity exposed by the pandemic.

“Black businesses and consumers are among the key contributors to the economic strength of our nation, and they deserve equal recognition and support for the vital role they play in our communities,” President and CEO of the National Urban League Marc Morial said at the time. “We are proud to partner with The PepsiCo Foundation on a matter of crucial importance that helps business owners and addresses one of the critical economic disparities impacting Black communities.”

Chef Samuelsson plans to also compose the very first all-vegan Met Gala dinner this September. Tasked by Vogue Editor-in-Chief and event organizer Anna Wintour, Samuelsson is preparing to bring a vegan twist on the modern American dining experience. The renowned chef hired several highly qualified chefs to develop an innovative, delicious, and plant-based menu including Fariyal Abdullahi, Emma Bengtsson, Lazarus Lynch, Nasim Alikhani, Junghyn Park, Thomas Raquel, Erik Ramirez, Simone Tong, Sophia Roe, and Fabian von Hauske.

“They represent what the food scene in New York today looks like … what the next generation of food looks like, tastes like, where it lives,” Samuelsson told Bon Appetit. “We thought it was important to really talk about what’s present, what’s happening — how food is changing in America. We want to be the future of American food, of plant-based food. That conversation is happening now.”

Before the Met Gala on September 13, viewers can begin watching Samuelsson’s “You Have to Taste This” show starting on August 18. The docu-series will be available on the Pepsi Dig In social media accounts (@PepsiDigIn) as well as the chef’s personal Youtube Channel.

This year’s Met Gala will show the world the newest and most innovative trends beyond fashion, food included. In the event’s overarching mission to surrounding inclusion and diversity, the 2021 Met Gala will feature its first completely plant-based menu. Due to the COVID-19 pandemic, the fashion event was pushed from the first weekend in May to September 13th. The event’s theme is centered around American fashion, co-chaired by vegan musician Billie Eilish, tennis star Noami Osaka, National Youth Poet Laureate Amanda Gorman, and actor Timothee Chalamet.

The menu is an innovative take on plant-based foods, putting vegan cuisine in the spotlight for the highly-publicized event. Not only is this the first time plant-based food dominated the event menu, but it is also the inaugural chef-based dining experience. Previously, the Met Gala solely served catered meals, but this Vogue Editor-in-Chief and event organizer Anna Wintour hired chef Marcus Samulesson to facilitate a modern American dining experience.

Samulesson assembled a team of highly qualified, NYC-based chefs to create a menu that both mirrors the American dining experience and pushed the event towards a more inclusive and diverse atmosphere. The chefs including Fariyal Abdullahi, Emma Bengtsson, Lazarus Lynch, Nasim Alikhani, Junghyn Park, Thomas Raquel, Erik Ramirez, Simone Tong, Sophia Roe, and Fabian von Hauske created a menu of innovative, “picnic-style” dishes. The menu will include reinvented dishes such as roasted potato skins, watermelon salad, and more.

“They represent what the food scene in New York today looks like … what the next generation of food looks like, tastes like, where it lives,” Samulesson told Bon Appetit. “We thought it was important to really talk about what’s present, what’s happening — how food is changing in America. We want to be the future of American food, of plant-based food. That conversation is happening now.”

Vogue will also be releasing videos featuring the Met Gala chefs on its Instagram Reels. The Met Gala chefs will share plant-based recipes to give viewers a sneak peek at this year’s team.

The United States food scene is rapidly changing, shifting towards plant-based cooking styles in every level of dining. Earlier this year, Eleven Madison Park – an internationally renowned NYC fine dining establishment – dropped meat from its menu to roll out its first completely plant-based menu. Today, The New York Times also announced that its NYT Cooking would be introducing The Veggie Newsletter. The new weekly newsletter will provide readers with several recipes and tips for plant-based eating and cooking. Overall, American culture is shifting its political and social perspectives in all categories from the environment to social inclusivity.

“I’ve been really impressed by American designers’ responses to the social and political climate, particularly around issues of body inclusivity and gender fluidity, and I’m just finding their work very, very self-reflective,” Andrew Bolton, the Wendy Yu Curator in Charge of the Costume Institute, told Vogue. “I really do believe that American fashion is undergoing a renaissance. I think young designers, in particular, are at the vanguard of discussions about diversity and inclusion, as well as sustainability and transparency, much more so than their European counterparts, maybe with the exception of the English designers.”

The Met Gala’s vegan shift follows the 2020 Golden Globes’ decision to cut meat from its menu. The event claimed that animal agriculture had become too serious of a threat to the environment and that it would assume responsibility to make the change, aiming to spread awareness of the detrimental impact of meat production.

“The climate crisis is surrounding us and we were thinking about the new year and the new decade. So we started talking between us about what we can do to send a signal,” Hollywood Foreign Press Association President Lorenzo Soria said at the time. “We don’t think we’ll change the world with one meal, but we decided to take small steps to bring awareness. The food we eat, the way it is processed and grown and disposed of, all of that contributes to the climate crisis.”

Gordon Ramsay just shared an innovative recipe for vegan bacon on his TikTok that we can’t wait to try out. Previously, the chef has been a harsh critic of plant-based foods, claiming that he was allergic to vegans. Recently, however, the hot-headed chef has changed his tune, providing his fans with plant-based alternatives to some of their favorite meat dishes. The new plant-based bacon is made in three stages, explained and demonstrated by the famous chef.

In the video, Ramsay begins by whisking together a marinade consisting of nutritional yeast, paprika, cayenne pepper, granulated garlic, maple syrup, sriracha, vegan butter, and soy sauce. The marinade is then used to coat a bowl of crumbled tofu. The chef then cuts strips of rice paper, lathers them with the marinade, and places the strips on a baking pan. The rice paper is then evenly covered with some crumbled tofu and topped with another strip of rice paper. The chef then instructs his followers to bake the rice paper and tofu. After baking, the chef presents a crispy, oily, plant-based “bacon” alternative, resembling the quality of traditional animal-based bacon.

Ramsay’s TikTok recipe ends with him putting the vegan bacon on a BLT sandwich. The chef stacks the vegan bacon on toasted bread with lettuce, lettuce, tomato, avocado, and vegan basil aioli. At the end of the video, the chef says, “I’m turning vegan…for lunch.”

This is not the first time chef Ramsay joked about turning vegan. After decades of criticism towards plant-based eating, it seems impossible that Ramsay would consider eating plant-based. Earlier this year, Ramsay released a TikTok video where he showed his followers how to make an eggplant steak. Telling his audience that he decided to turn vegan, Ramsay demonstrates how to cook a delicious vegan steak. Before this, the chef also featured eggplant at his famous Gordon Ramsay Street Pizza Restaurant [currently called Bread Street Kitchen] in London with the vegan Charred Aubergine Pizza.

Since then, Ramsay has continued experimenting with plant-based foods after seeing the success of his restaurant’s vegan option. The restaurant rolled out a completely plant-based menu in 2019, celebrating Veganuary – a global challenge that encourages restaurants, companies, people, and public figures to go vegan for January. During this plant-based takeover, Ramsay revealed a plant-based version of his signature dish: Beef Wellington. Instead of using beef products, the vegan version replaced the meat with beets.

Ramsay gained a reputation for being an unforgiving, hot-headed, diligent chef through his show Hell’s Kitchen. For years, the cooking game show has featured a heavily meat-centric diet, but earlier this year, the chef introduced the first vegan and vegetarian chefs to join the show. Vegan chef Josie Clemens and vegetarian chef Emily Hersh entered Hell’s Kitchen, taking up the challenge no one before had dared to attempt: impressing Gordon Ramsay with a plant-based dish.

Last week, Ramsay announced that he would be supporting Silk’s new oat milk product, featured as the G.O.A.T. at Yelling in Kitchens in the company’s Greatest of All Time campaign. This marks the first time the formerly anti-vegan chef has endorsed a plant-based product. Now, he shocks his fans by becoming an ambassador to the plant-based milk company, shifting his stance on vegan eating in the public eye once again. The chef attributed this stark shift to his children eating more plant-based than he ever did.

“Well, it took my kids getting on me, but now I really enjoy cooking more plant-based dishes at home and in my restaurants,” Ramsay said. “Let me tell you, I know greatness when I taste it, and I am loving Silk Oatmilk for both sweet and savory recipes.”
