Ingredients

  • 15 florets cauliflower
  • ½ tsp salt
  • 4 cup hot water

  • ½ tsp coriander powder
  • 1 tsp ginger garlic paste
  • 1 tsp lemon juice
  • 2 tbsp coriander finely chopped
  • ½ tsp salt
  • ¼ cup corn flour
  • ¼ cup rice flour
  • oil for frying

Gunpowder Spice Mix

  • 1 tbsp sesame seeds, dry roasted
  • 2 tsp oil
  • ½ cup urad dal
  • ¼ cup chana dal
  • 2 tablespoons red chili flakes
  • 10 curry leaves
  • ¼ cup dry coconut powder
  • ½ tsp brown sugar
  • ½ tsp turmeric
  • 1 tsp salt

Instructions

  1. Dry roast sesame seeds in a pan until golden brown and lightly toasted. Transfer to the blender and keep aside.
  2. In the same pan , heat oil and add in the dals. Roast on low flame till the dal turns slightly golden in color. Transfer to the blender and keep aside.
  3. Add chili, coconut, sugar, salt and turmeric. Blend into a coarse powder and set aside.

What is Chana Masala?

Chana Masala also referred to as chole masala, is an Indian dish made with chickpeas that originated in Northern India. Chana Masala is naturally gluten-free and vegan. In India, Chana Masala is typically eaten as a snack or dinner.

What’s the difference between Tikka Masala and Chana Masala?

Tikka Massala uses small pieces of meat such as chicken whereas Chana Masala recipes use chickpeas as the main component. Chana Masala is a vegan dish that is packed with plant protein, folate, iron and fiber from chickpeas. Chana Masala is also widely considered one of the healthiest dishes in Indian cuisine.

What does Chana Masala taste like?

This Vegan Chana Masala recipe has a spicy kick from the green chilies, chili powder and cumin. The chickpeas are cooked in a tomato and onion sauce that is thick and creamy. By cooking it in the sauce, chickpeas are able to develop flavor while still retaining a tender bite.

  • Vegetable oil
  • Bay leaf

How to make Vegan Chana Masala

Heat oil in a large saucepan. Add in a bay leaf, and finely chopped onions and sauté till the onions are light brown in color. Mix in the green chilies, ginger garlic paste and coriander leaves. Sauté the mixture for two minutes.

Season with 2 tablespoons of chana masala spice powder. Add in the salt and sugar to balance the flavors. Sauté for a few seconds.

Add the tomato puree to the pan. Mix well to combine. Add 2 cups of water.

Mix in drained chickpea. Bring it to a boil, reduce the flame and simmer for 20 to 30 minutes masala and cook for 15 minutes. Adjust for water and salt as needed.

Chana Masala Spice Powder

Note – You can buy a ready-made chana masala spice mix from a grocery store.

Dry roast cinnamon, black cardamom, cloves, coriander seeds, cumin seeds, fennel seeds and black pepper on a low flame till the spices are fragrant.

Switch off the flame and add in the kasuri methi, red chili powder, turmeric powder and amchur powder. Saute for a few seconds on the residual heat from the pan.

Set aside this mixture to cool. Once the mixture is cool, grind to a fine powder. Set aside. This powder can be stored in the freezer for months and will stay fresh.

Can you buy Chana Masala spice mix at the store?

Chana Masala spice mix can be purchased online at Amazon or in grocery stores such as Whole Foods. If you are unable to find Chana Masala spice mix, you can either make it from scratch or buy Garam masala and mix it with dry mango (amchur) powder.

How to store Vegan Chana Masala

Vegan chana masala is the perfect recipe to make in bulk and keep in the fridge for when you are short on time or don’t feel like cooking. Store leftovers in an airtight container in the fridge for one to two days. Vegan Chana Masala can also be frozen for up to two months. Microwave or heat up on a stovetop when ready to eat.

Roasted Carrot and White Bean Soup

Roasted Carrot & White Bean Soup

Serves 4
Total Time: 1 hour

Ingredients

  • 18 Carrot (medium, peeled, and roughly chopped)
  • 1 tbsp Extra Virgin Olive Oil (divided)
  • Yellow Onion (medium, diced)
  • 3 stalks of Celery (chopped)
  • 4 Garlic (cloves, minced)
  • 4 cups Organic Vegetable Broth
  • 2 1/2 cups White Navy Beans (cooked, drained, and rinsed)
  • 1 tsp Turmeric
  • 1/4 cup Tahini
  • 1/2 Lemon (juiced)

Instructions

  1. Preheat your oven to 375oF (191oC) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the chopped carrots with half of the olive oil. Spread them over the baking sheet and roast for 40 minutes, tossing halfway through cooking.
  3. In a large pot, heat the rest of the olive oil. Add the onion and celery, cook for 7-10 minutes or until softened. Then add the garlic and cook for 2 to 3 more minutes.
  4. Add the roasted carrots, vegetable broth, white beans, turmeric, and tahini into the pot. Use an immersion blender to puree until completely smooth. Add lemon juice and salt and pepper to taste.
  5. Divide between bowls and enjoy!

Notes: 

Leftovers: Refrigerate in an airtight container for up to 4 days, or freeze for up to 6 months.

Serving Size: One serving is approximately 2 cups.

No Immersion Blender:  Use a regular blender instead, ensuring there is a place in the lid for the steam to escape.

Carrot Tip:  If using different-sized carrots, aim for about 0.5 lb. of carrots per serving.

Panisse are chickpea fries, popular in southern France. Chickpea flour makes them crispy on the outside and creamy in the middle. They have a mild flavor, kind of like potato French fries, so we amp them up with black garlic, a type of slowly fermented garlic with deep, earthy, caramel-y, pungent, and almost sweet flavors. Black garlic is the bomb, and it keeps forever.

Look for it in gourmet stores or online. You’ll find yourself using it in pasta, on pizza…anywhere you need a little oomph. If you can’t find it, use roasted garlic paste. Serve the Panisse with zesty citrus aioli for a fantastic party appetizer!

What You’ll Need to Make Chickpea Fries

Chickpea fries are easy to make and many of the ingredients you’ll already have on hand, like everyday olive oil, vegetable stock, garlic, black pepper, plant milk, vegetable oil, and sea salt. Maybe… you even have an onion leftover from taco night. The only ingredient you may need to find at the grocery store is chickpea flour.

  • Coarse sea salt, for garnish

Where Can I Buy Chickpea Flour?

Chickpea flour made from dried chickpeas is available at most grocery stores, however, it may be under a different name such as garbanzo flour, gram flour, and besan. Bob’s Red Mill sells chickpea flour and is also available online and on Amazon.

Are Chickpea Fries Vegan?

This chickpea fries recipe is 100 percent vegan, but many others may contain dairy or eggs to bind together the dry and wet ingredients. The citrus aioli is made with dairy-free mayonnaise that tastes just like the real thing, it may even surprise you that it’s vegan!

Prep Time: 10 minutes
Cook Time: (plus 20 minutes cooling time)

Vegan Chickpea Panisse With Citrus Aioli

Makes 8-10 pieces

Ingredients

Panisse

  • 2 Tbsp everyday olive oil
  • 1/4 cup diced onion
  • 1 Tbsp mashed black garlic
  • 3 cups vegetable stock
  • 1 cup unsweetened plant milk
  • 1 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 2 1/4 cups chickpea flour
  • Peanut oil or vegetable oil, for frying
  • Coarse sea salt, for garnish

Citrus Aioli:

  • 1/3 cup plant-based mayonnaise
  • 1 tbsp minced green onion
  • 1/4 cup orange juice
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp chopped fresh rosemary, optional

Instructions

  1. For the Panisse: Coat a 9-inch square baking dish with olive oil and line with parchment paper. Heat 1 tablespoon oil in a small saucepan over medium-high heat. Add the onion, cut the heat to medium, and sauté until golden, about 2 minutes. Whisk in the black garlic, then the stock and milk. Continue to cook, whisking, until the garlic is evenly distributed.
  2. Bring the mixture to a simmer and whisk in the salt and pepper. Gradually whisk in the chickpea flour until it’s fully incorporated with no lumps. Use a wooden spoon to continue stirring, and cook until the mixture thickens and bubbles, 5 to 8 minutes. It should be somewhat thick but still pourable. If it gets too stiff to stir, whisk in a little more milk or stock.
  3. Quickly pour the mixture into the pan, spreading it evenly to the edges and smoothing the top. Let stand until set, at least 20 minutes. Or cool, cover, and refrigerate for up to 2 days.
    For the aioli: Mix everything together in a small bowl. The consistency will thin out a bit as it sits, which is fine. It should be more like a creamy dipping sauce and less like a stiff mayonnaise. Keep chilled until ready to use.
  4. When ready to serve, invert the pan of Panisse onto a cutting board, remove the parchment, and cut the square into fingers the size of large French fries, about 3 inches long and 3/4 inch wide.
  5. Heat the oil in a large cast-iron pan over medium-high heat. Add the Panisse without crowding and cook until lightly browned all over, 3 to 4 minutes per side. Remove to paper towels and immediately sprinkle with flake salt. Continue cooking the Panisse with fresh oil as needed.
  6. Stack the Panisse on a plate. Serve with the aioli for dipping.

Note:
Instead of making finger-shaped Panisse, use a cookie cutter to cut out rounds or other shapes. Top the fried rounds with the aioli (and herbs or minced vegetables if you like) and serve as canapés.

  • Choose nuts like hazelnuts, almonds, walnuts, pecans, macadamias, or pistachios. Toast them for extra flavor, if you prefer.

  • 1/2 tsp ground cardamom
  • 1/8 tsp ground nutmeg
  • 1/3 cup / 80 ml vegetable oil
  • 1/2 cup / 120 ml apple juice
  • 10 oz / 300 g mixed dried fruits
  • 10 oz / 300 g mixed nuts and seeds

Instructions

  1. Preheat oven to 360 F / 180 C.
  2.  In a large bowl mix together flour, sugar, baking powder, cinnamon, cloves, cardamom, and nutmeg.
  3. Pour in oil, apple juice, and around 2/5 cup or 100 ml water, and mix everything well together.
  4. Fold in fruits, nuts, and seeds.
  5. Pour dough into a silicon form, or a lightly greased pan, and smooth out the top.
  6. Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely before slicing.

In an airtight container at room temp, your donuts will stay fresh for one to two days. If you want to enjoy the donuts later in the week, refrigerate them for up to four to five days, but if you want to have them months from now, wrap each donut in wax paper and store them in the freezer for up to 3 months.

Easy Vegan Substitutes for Vegan Donuts

Have all the ingredients on hand but missing a few? We have easy substitutes that you may already have and will save you a trip to the grocery store. Don’t have vegan butter? Try coconut oil instead and use the same measurements. If you’re looking for a gluten-free option for vegan donuts, try using a gluten-free blend instead of all-purpose flour. The ratios are the same! Don’t have applesauce but have a banana laying around? Use mashed banana instead of apple sauce and you’ll still get that gooey, eggy texture.   • 1 tablespoon vegan butter, melted ($0.15)

Glaze & topping

  • ¼ cup natural cocoa powder ($0.44)
  • 1 ¾ cups powdered sugar ($0.42)
  • A pinch of salt optional
  • 3-4 tablespoons soy milk ($0.10)
  • 2-3 tablespoons crushed peppermint candies ($0.18)

Instructions

Donuts

  1. ​​Combine the ground flaxseed and water in a small bowl. Set it aside for 5-10 minutes, or until gelatinous and thickened.
  2. Preheat your oven to 350 degrees F, and lightly spray or grease a 12-donut pan.
  3. In a large mixing bowl, sift the flour, sugar, cocoa, baking powder, baking soda, and salt, then whisk to combine.
  4. In a separate bowl, combine the flax egg, milk, vinegar, applesauce, butter, and vanilla extract until smooth.
  5. Add the wet ingredients to the dry ingredients. Mix until just combined, but be careful not to overmix the batter.
  6. Transfer the batter to a piping bag fitted with a large tip or a freezer bag with one corner cut off. Pipe the batter into the prepared donut pan, about ½ -¾ full.
  7. Bake the donuts for 9-10 minutes, or until slightly springy. Let the donuts cool in the pan for 5 minutes, then pop them out of the pan and onto a wire rack to finish cooling.

Glaze & topping

  1. To make the glaze, sift the cocoa powder, powdered sugar, and salt together in a small bowl, then mix in the soy milk until the glaze is smooth.
  2. Once the donuts have cooled completely, dip the tops in the glaze. Immediately sprinkle them with crushed peppermint candies, then return them to the wire rack until the glaze has set. Enjoy!

  • Jam glaze

Easy Vegan Challah Bread Substitutions

  • Replace butter with oil

  • Aquafaba wash or maple syrup wash instead of apricot jam and plant milk wash
  • Use 1:1 gluten-free flour blend for all-purpose flour

Step-By-Step Instructions to Make Vegan Challah 

Add the all-purpose flour, cane sugar, instant yeast, and salt. Whisk together until well combined.

Next, add the melted vegan butter, vegetable oil, and warm water. Mix the dough with a spatula until shaggy. Continue kneading with your hands for 7-8 minutes, or until the dough is smooth and elastic.

Transfer the dough to a large mixing bowl coated with oil, then brush the top of the dough with oil as well. Cover the bowl with plastic wrap and let the dough rise for 1 ½ – 2 hours, or until it has doubled in size.

Gently punch the air out of the dough and remove it from the bowl. Divide it into 2 even halves, then further divide the dough halves into 3 even pieces.

Roll each piece into a snake-like shape with tapered ends, about 10-12 inches long. Place the 3 pieces side-by-side and pinch the ends together at the top.

Braid the loaf by bringing each outer strand into the middle until you reach the end of the strands. Pinch the ends together, and tuck each end of the loaf under on itself. Repeat with the other loaf as well.

Transfer both loaves onto a parchment-lined baking sheet and cover loosely with a piece of plastic wrap sprayed with cooking oil.

Let proof for another 90 minutes, or until they’ve risen to about double in size, are puffy, and leave a slight indent when pushed on.

Why Proofing Vegan Challah Bread Is Important

Vegan challah bread can be a sensitive dough. If under-proofed, the vegan challah bread dough will tear in the oven. If over-proofed, the dough will form air bubbles that are too large. The bubbles will then pop and the dough will deflate while baking.

Can You Make a Challah Bread Glaze Without Egg?

The egg wash is one of the most important steps that gives the challah bread its signature glossy appearance. It also helps add moisture to the vegan challan dough, which helps it rise.

Most Challah bread recipes use an egg wash to give it this shiny appearance. In this recipe, we use apricot jam and plant milk to form the glaze.

Brush the loaves with half of the glaze mixture, then bake them for 20 minutes. Brush on the rest of the glaze, then rotate the loaves to evenly cook both sides.

Bake them for another 13-15 minutes, or until the crust is golden brown and shiny. Let the loaves cool for a few minutes before serving. Enjoy!

How much to use of these will depend on the type of cookies you crumbled. If you use filled or softer cookies you will need less of the ‘wet ingredients’ compared to some drier cookies.

Customize Vegan Pine Cone Cookies

No-bake vegan pine cone cookies are extremely versatile and customizable.

  • Use orange or lemon zest to brighten up the flavor of the cookies.
  • Sprinkle your favorite holiday spices such as ground ginger, cinnamon, or pumpkin spice to the mix.
  • Chocolate lovers will want to add in cocoa powder for extra chocolate flavor.
  • If you’re looking for different textures throughout the vegan pine cone cookies, use coconut flakes, chopped dried nuts or cacao nibs.

  4. If the dough seems too dry after chilling, add a splash of dairy-free milk and knead again.
  5. Shape about 1/4 cup of the dough into a cone or pyramid. Starting from the bottom, insert chocolate cornflakes into the dough to resemble pine cones. Repeat with the rest of the dough.
  6. Chill in the fridge for a couple of hours. Dust with sugar before serving.

Make Your Own Vegan Chocolate Spread From Scratch

You can either buy vegan Nutella or make your own vegan chocolate from scratch. Homemade vegan chocolate spread takes under 5 minutes to make. Melt 7 ounces of dark chocolate in a double boiler, stir in a few tablespoons of coconut cream and refrigerate for 25 minutes.

No-Bake Vegan Pine Cone Cookies

Makes about 12 pine cones

Prep Time: 10 mins

Chilling time: 1 hour

Decorating: 20 mins

Ingredients

  • 1.1 lbs/500 g cookies (about 4 cups of cookie crumbs)
  • 2-4 tbsp vegan chocolate spread or nut butter
  • 4-6 tbsp jam
  • chocolate cornflakes
  • powdered sugar

Instructions

  1. Place cookies in a food processor. Pulse into fine crumbs. Work in batches, if needed.
